Ingredients: 2 small baking potatoes 1 tablespoon skim milk 1 teaspoon spreadable margarine 2 tablespoons reduced fat sour cream 2 tablespoons reduced fat shredded cheddar cheese 1/8 teaspoon pepper Paprika Instructions: Preheat oven to 400 degrees (F). Scub potatoes and poke a few times with a fork. Bake in preheated oven until a fork can slide in easily, about 45 minutes. Reduce oven to 350 degrees. Let potatoes cool slightly on a cutting board. Cut in half lengthwise. Scoop out potato halves, leaving about 1/8 inch thick shell, and set aside. Combine the potato that was scooped out with milk, margarine, sour cream, cheese, and pepper. Mash together by hand with a potato masher, or beat with electric mixer, until well combined. Divide the mixture evenly among emptied potato shells. Sprinkle with paprika. * Return to oven and heat through, about 15 to 20 minutes. * Can be refrigerated at this point until ready to eat. Heat in preheated, 350 degree oven for 30 minutes.
